Mum just keeps outdoing herself and last night was a ginger and banana cake. She used a free-from banana cake mix. These are great because they mix rice flour along with other gluten free flours. There’s no need for eggs in banana cake as the banana works as an egg replacement. She then had some crystalised ginger leftover and put them in.
We added greek-style coconut yoghurt and ate with a teaspoon. Got to love how gluten free vegan food cuts down the bloat and you can still feel light and free after dessert!
