Vegan halloumi! Yes you heard right

My lovely brother Jared bought me a vegan cheese making kit for Christmas. I finally tried it out by making halloumi.

I used cheese salt, garlic infused olive oil, tapioca starch, agar agar and a cup of soaked cashews.

It says to soak the cashews overnight for 8 hours but you can do it with hot water in 4 hours if that suits.

You then blend the ingredients together until they form a paste.

Then you put it into a pot and stir on a low heat. You keep moving it so it doesn’t burn. Once it’s sticking together and becoming solid.

Then put it on a tray and refrigerate overnight.

The next day you pan fry it lightly on each side until golden marks appear – just like real halloumi!

We tucked in and it was pretty good! Next time I’ll add more salt and squeeze lemon juice over it before serving. I’ll also cook and stir it for longer to get a bit more solid.
