Ratatouille, rice, beetroot pattie and vegan cheese

Sam was coming up with a meal for dinner and put these picks together. It was very delicious and quick to make!

The ratatouille came from a can so that just requires heating. Although we realised you can also eat it cold so feel free to do that!

The rice is a tomato flavoured Uncle Bens packet, also easy to heat.

The beetroot pattie is from the vege meats fridge section at New World. It also has some aubergine dip on top.

The gouda cheese was from Let Them Eat Vegan in Dunedin. So that was a special treat on the side!

If you’re trying to come up with a meal, putting leftovers you have on different parts of the plate is a great way to get variety in a meal!
